Pasta Primavera Casserole

  1. Cook pasta as directed; drain.
  2. Spoon into greased 14 x 10 x 2-inch baking dish.
  3. Saute zucchini, red peppers, mushrooms and scallions in butter in large skillet for 3 minutes.
  4. Add tomatoes; spoon over pasta.
  5. Place flour in skillet; blend in milk.
  6. Add broth, nutmeg and pepper.
  7. Cook and stir over medium heat until mixture thickens.
  8. Add spinach.
  9. Pour mixture over vegetables. Cover; bake at 350u0b0 for 40 to 45 minutes.
  10. Garnish with parsley.
