Pasta Primavera Casserole
- 1 pkg. rigatoni or ziti pasta
- 2 medium zucchini, cut into strips
- 2 red peppers, cut into strips
- 2 c. sliced mushrooms
- 1 c. chopped scallions
- 1/2 c. butter or margarine
- chopped tomatoes
- 1/2 c. flour
- 2 c. milk
- 2 c. chicken broth
- 1/2 tsp. nutmeg
- 1/4 tsp. pepper
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained (2 c.)
- Cook pasta as directed; drain.
- Spoon into greased 14 x 10 x 2-inch baking dish.
- Saute zucchini, red peppers, mushrooms and scallions in butter in large skillet for 3 minutes.
- Add tomatoes; spoon over pasta.
- Place flour in skillet; blend in milk.
- Add broth, nutmeg and pepper.
- Cook and stir over medium heat until mixture thickens.
- Add spinach.
- Pour mixture over vegetables. Cover; bake at 350u0b0 for 40 to 45 minutes.
- Garnish with parsley.
