Pumpkin Raisin Cake

  1. Combine flour, sugar, pumpkin pie spice, baking powder, baking soda and salt; set aside.
  2. In a large bowl, beat eggs.
  3. Add pumpkin and oil stir in cereal just until moistened.
  4. Add dry ingredients and stir just until combined.
  5. Fold in pecans and raisins.
  6. Pour into a greased 10-inch tube pan.
  7. Bake at 350u0b0 for 60 to 65 minutes or until cake tests done.
  8. Cool in pan for 10 minutes before removing to a wire rack to cool completely.
  9. Dust with confectioners sugar before serving if desired.
  10. Yields 12 to 16 servings.
