Sweet Chilli Prawn Patties
- 400 g green prawns, peeled
- 2 garlic cloves, diced finely
- 2 cm ginger, diced finely
- 1/2 bunch coriander leaves, picked and chopped finely
- 1 tablespoon lemongrass, finely diced
- 1/2 teaspoon fish sauce
- 1 egg
- 1 tablespoon plain flour
- salt and pepper
- 2 tablespoons sweet chili sauce
- Mince prawns in blender or food processor.
- Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
- Add egg and stir through.
- Season to taste.
- Check consistency and add flour as required to stiffen up mixture.
- Make into small patties using 1 teaspoon of mixture at a time.
- Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
- Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
- Serve while hot.
