Candied Grapefruit Peel
- grapefruit peeling
- water
- sugar
- food coloring
- gelatin - optional
- Take any amount of grapefruit peeling and cut into strips approximately 3-inches long by 1/2 inch wide.
- Wash and be sure to remove all pulp.Soak the peeling in salted cold water for three days.
- Drain off this water and cover with fresh cold water and bring to a boil. Drain, and for the second time - cover with fresh cold water and bring to a boil.
- Again, drain, and for the third time - cover with fresh cold water and bring to a boil. This procedure eliminates the bitter taste. In a separate saucepan mix 2 parts of granulated sugar with 1 part of water and bring to a boil. Put in any food coloring, such as green or red for Christmas.
- Add drained peeling to this syrup and cook until peel strips are transparent.
- Drain well and lay on a cookie sheet to cool.
- Roll in granulated sugar.
- Store in glass jars.
