Candied Grapefruit Peel

  1. Take any amount of grapefruit peeling and cut into strips approximately 3-inches long by 1/2 inch wide.
  2. Wash and be sure to remove all pulp.Soak the peeling in salted cold water for three days.
  3. Drain off this water and cover with fresh cold water and bring to a boil. Drain, and for the second time - cover with fresh cold water and bring to a boil.
  4. Again, drain, and for the third time - cover with fresh cold water and bring to a boil. This procedure eliminates the bitter taste. In a separate saucepan mix 2 parts of granulated sugar with 1 part of water and bring to a boil. Put in any food coloring, such as green or red for Christmas.
  5. Add drained peeling to this syrup and cook until peel strips are transparent.
  6. Drain well and lay on a cookie sheet to cool.
  7. Roll in granulated sugar.
  8. Store in glass jars.
