Baked Stuffed Onions
- 6 large onions
- 1/2 tsp. salt
- 2 Tbsp. vegetable oil
- 1/4 lb. ground beef
- 1 c. cooked rice
- 1 egg yolk
- 1/2 c. soft bread crumbs
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 Tbsp. melted butter
- 2 Tbsp. grated Parmesan cheese
- 1/2 c. soft bread crumbs
- 1 Tbsp. chopped parsley
- Cut off root; peel and rinse onions.
- Cut a 1/2-inch slice from the top of each onion.
- Cook onion, uncovered, in salted water to cover for 10 to 15 minutes or until slightly tender. Drain well; cool.
- Heat oil in skillet; add ground beef and saute until browned.
- Scoop centers out of onions; chop and add to ground beef.
- Saute until golden.
- Combine rice, egg yolk, salt, pepper and bread crumbs with meat mixture.
- Fill onions.
- Mix together melted butter, cheese, parsley and bread crumbs.
- Spread over top of onions.
- Bake in a greased casserole in a 350u0b0 oven for 1 hour.
- Serves 6.
