Chocolate Chip Peanut Butter Cake
- 2 1/4 c. unbleached or all-purpose flour
- 2 c. firmly packed brown sugar
- 1 c. peanut butter
- 1/2 c. butter or margarine, softened
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1 c. milk
- 1 tsp. vanilla
- 3 eggs
- 1 c. (6 oz.) pkg. semi-sweet chocolate chips
- Generously grease bottom only of 13 x 9-inch baking pan.
- In large bowl, combine flour, brown sugar, peanut butter and butter or margarine.
- Reserve 1 cup.
- Add baking powder, soda, milk, vanilla and eggs to remaining crumb mixture.
- Blend at low speed until moistened, beat 3 minutes at medium speed.
- Pour batter into pan. Sprinkle with 1 cup reserved crumbs.
- Sprinkle chocolate chips over crumbs.
- Bake at 350u0b0 for 35 to 40 minutes, until toothpick inserted in center comes out clean.
