Pasta Primavera Salad
- 1/2 lb. pasta wheels or other fun shapes
- 5 c. vegetables: carrots, zucchini, broccoli or peppers, cut into 1-inch pieces
- 1 Tbsp. salad oil
- 1/4 c. fresh lemon juice
- 2 Tbsp. grainy mustard
- 2 Tbsp. red vinegar
- 2 medium garlic cloves, minced
- 1/2 c. ham in strips (optional)
- 1/2 c. olive oil
- 1/4 c. sour cream
- 2/3 c. grated Parmesan cheese
- 1 lb. part-skim Mozzarella cheese, cut in 1/2-inch pieces
- 1/3 c. finely chopped fresh basil
- Cook pasta according to package directions, adding vegetables to water during last 5 minutes of cooking.
- Drain; rinse with cold water and drain again.
- Place in large serving bowl; toss with salad oil.
