Pork Stir-Fry
- 1 lb. lean pork
- 1 bunch fresh broccoli
- 2 peeled carrots
- 1 medium onion
- 2 Tbsp. salad oil
- 1 clove garlic, minced
- 3/4 c. water
- 1/4 c. soy sauce
- 1 Tbsp. cornstarch
- 2 tsp. sugar
- 1/8 tsp. ginger
- Cut pork into 1/4-inch strips.
- Slice broccoli stalks into thin rounds, about 1/8-inch thick.
- Break broccoli head into small flowerets.
- Cut carrots in half crosswise; then cut into thin strips, about 1/4-inch thick.
- Cut onion in thin strips, about 1/4-inch thick.
- Heat oil and garlic in wok or skillet.
- Add pork and broccoli stems; cook, stirring constantly, over high heat until pork is no longer pink.
- Add carrots, onion and flowerets. Reduce heat, cook, covered, 5 minutes, until vegetables are crisp-tender, stirring occasionally.
- Combine remaining ingredients and pour into skillet.
- Simmer for 2 minutes until sauce is thick.
- Serve over rice, if desired.
- Makes 4 servings.
