Festive Fruitcake

• 1 (16 oz.) pkg. mixed dried fruit bits
• 1/2 c. raisins
• 1/3 c. chopped pecans
• 1/4 c. chopped maraschino cherries
• 1 tsp. vanilla
• 1 (8 oz.) can crushed pineapple (juice pack)
• 1 c. all-purpose flour
• 1 tsp. baking powder
• 1/2 tsp. ground cinnamon
• 1/2 tsp. ground nutmeg
• 1 egg
• 1 egg white
• 1/4 c. packed brown sugar
• 2 Tbsp. molasses
• 2 Tbsp. margarine, melted

4. x 4 x 2-inch loaf pan with nonstick spray coating.

8. mixing bowl, combine fruit bits, raisins, pecans, maraschino cherries and vanilla.
9. Toss lightly. Drain pineapple well, reserving juice.
10. Set aside.
