Mocha Walnut Pudding Cake
- 1 c. flour
- 3/4 c. sugar
- 3 Tbsp. cocoa (unsweetened)
- 2 tsp. baking powder
- 1 tsp. instant coffee
- 1/4 tsp. salt
- 1/8 tsp. cinnamon
- 1 c. chopped walnuts
- 1/2 c. milk
- 1/4 c. butter, melted
- 1 tsp. vanilla extract
- 1 Tbsp. dark rum
- 1/2 c. sugar
- 1/2 c. brown sugar
- 5 Tbsp. cocoa
- 1 c. hot water
- whipping cream or ice cream
- Preheat oven to 350u0b0.
- Sift first 7 ingredients together into a medium bowl.
- Stir in walnuts.
- In another bowl combine milk, butter, vanilla and rum.
- Combine with flour mixture and mix until smooth.
- Spread into an 8-inch square baking dish.
- Mix next 3 ingredients together and sprinkle over top of batter mixture. Pour hot water over the top.
- Do not mix.*
- Bake at 350u0b0 for 40 minutes.
- Cool at least one hour.
- Serve warm with whipped cream or ice cream.
