Nicoise Green Beans
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 2 sticks celery, chopped
- 1 lb. string (green) beans (fresh or frozen)
- 1 (16 oz.) can chopped tomatoes
- 4 Tbsp. vegetable stock, tomato juice or water
- 1 bay leaf
- 1/2 c. fresh parsley
- basil, oregano, salt and pepper to taste
- Saute onion and celery in large frying pan with the oil until lightly browned.
- Boil or steam beans until tender (about 10 minutes).
- Drain and set aside.
- Add tomatoes, stock, juice or water, bay leaf, parsley and other spices to saute.
- Stir well and simmer for 20 minutes, uncovered.
- Continue to season to taste. Add the cooked beans to the sauce and stir.
- Bring to a simmer and cook for 2 to 3 more minutes.
- Serve immediately.
- Serve with pasta, rice or potatoes.
