Oatmeal Muffins
- 1 cup rolled oatmeal (not instant)
- 1 cup buttermilk (or 1 cup milk with 1 tsp. lemon juice)
- 1/3 cup soft butter or margarine
- 1/2 cup brown sugar
- 1 egg
- 1 cup flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- 1 cup flour
- 3 Tsp. sugar
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup nuts, finely chopped
- 1/2 cup oatmeal
- 1 well beatened egg
- 1 cup mashed ripe banana
- 1/4 cup milk
- 2 Tbsp. vegetable oil
- Mix together dry ingredients.
- Mix together all other ingredients.
- Stir together just until moistened.
- Fill greased muffin pans 2/3 full and bake at 400u0b0 F. for 20 to 25 minutes. Should make 10 muffins.
