Frozen Pineapple Delight
- 2 c. vanilla wafer crumbs
- 1/4 c. melted butter
- 1/2 c. firm butter
- 1 c. icing sugar
- 1 egg
- 1 tsp. vanilla sugar
- 1 pt. whipping cream
- 1 (20 fluid oz.) tin crushed pineapple
- Combine crumbs and melted butter.
- Put aside 1/2 cup of buttered crumbs for the top.
- Put the rest in 9 x 12-inch pan and press down smoothly.
- Cream remaining butter; gradually add icing sugar.
- Cream thoroughly.
- Add egg until smooth.
- Add vanilla flavor, if desired, and spread mixture over crumbs in the pan. Whip cream until stiff.
- Combine with tin of pineapple, well drained.
- Spread over mixture in pan.
- Sprinkle the remaining buttered crumbs over the top and decorate.
- Place in freezer and keep it there until needed.
- It can be kept for 1 month.
- Set out 1 to 2 hours before serving.
