Microwave Beef Stroganoff Casserole
- 1 lb. lean ground beef
- 1/4 c. chopped onion
- 2 cloves garlic, minced
- 3 c. (4 oz.) uncooked medium wide noodles
- 1 c. sliced mushrooms
- 1 (13 1/2 oz.) can beef broth
- 1/8 tsp. pepper
- 1 (8 oz.) container sour cream
- 2 Tbsp. chopped parsley
- Combine beef, onion and garlic in 2-quart microproof casserole. Place in oven.
- Cook on High 3 minutes.
- Pause and stir; cook in microwave on High 2 minutes.
- Stir in noodles, mushrooms, broth and pepper.
- Cover with casserole lid or plastic and cook on half power 11 minutes.
- Stir, cover and cook on half power for 11 minutes. Remove from oven and let stand, covered, 5 minutes.
- Blend in sour cream and sprinkle with parsley before serving.
- Serves 6.
