Mixed Bean Pot(Gas Grill Recipe)
- 1 onion, finely chopped
- 1 clove garlic, minced
- 3 slices bacon, chopped
- 1 (1 lb.) can baked beans
- 1 (1 lb.) can garbanzo beans, drained
- 1 (1 lb.) can red kidney beans
- 1/2 c. catsup (regular or hickory flavored)
- 1/4 c. cold water or red wine
- 3 Tbsp. vinegar
- 2 Tbsp. brown sugar or molasses
- 1 tsp. dry mustard
- 1 tsp. salt
- 1/4 tsp. pepper
- Place a large cast-iron skillet on grill.
- Add onion, garlic and bacon.
- Cook at high flame setting until brown.
- Add remaining ingredients and stir.
- Reduce flame setting to low.
- Cook about 35 minutes with the grill cover closed or in the 1-inch position, stirring occasionally.
- Yield: 10 to 12 servings.
