Creole Shrimp
- 4 Tbsp. oil
- 2 cloves garlic
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 large can tomatoes
- 2 bay leaves
- several dashes hot sauce or cayenne pepper
- salt and pepper to taste
- chili powder to taste
- 2 stalks chopped celery
- 1 or 2 lb. shrimp (already cooked and cleaned)
- Heat oil in skillet (I use electric).
- Add garlic and onion. Cook until almost transparent, then add green pepper and cook until transparent.
- Add tomatoes, bay leaves, hot sauce or cayenne pepper, salt and pepper and chili powder.
- Simmer 30 to 40 minutes.
- About 20 minutes before serving, add chopped celery and cook until almost looses its crispness.
- Add shrimp.
- Simmer until shrimp has warmed.
- Serve over hot rice.
