Spaghetti Sauce For A Crowd
- 1/2 bushel ripe tomatoes
- 3 heads garlic
- 3 lb. onions or 8 to 10 large onions
- 48 oz. tomato paste
- 1 1/2 c. sugar
- 1/4 c. salt
- 3 Tbsp. oregano
- 1 1/2 c. corn oil
- 40 lb. ground beef (optional)
- 5 bell peppers
- 1/4 c. Worcestershire sauce
- 1 Tbsp. black pepper
- Puree tomatoes, onions and garlic in blender.
- Pour into very large saucepan.
- Add tomato paste, sugar, salt, oregano and oil. If using meat, place in very large frying pan and cook until light brown.
- Drain excess fat and add bell peppers that have been cut up in small pieces.
- Also, add Worcestershire sauce and black pepper.
- Add to tomato sauce and place in a commercial size or 5 gallon saucepan.
- Mix well and simmer for 1 to 3 hours with or without the meat.
- Yield:
- 200 servings.
