Low-Fat Snow Peas Oriental

  1. Coat a nonstick skillet with cooking spray.
  2. Add oil; place over medium heat until hot.
  3. Add snow peas and carrots.
  4. Simmer 2 minutes.
  5. Add chestnuts and broth.
  6. Bring to a boil.
  7. Cover, reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
  8. Combine soy sauce and cornstarch, stirring until cornstarch is dissolved.
  9. Add to vegetable mix.
  10. Cook over medium heat, stirring constantly, until sauce thickens.
  11. Serve immediately.
  12. About 51 calories per 1/2-cup serving.
