Low-Fat Snow Peas Oriental
- vegetable cooking spray
- 1 tsp. light sesame oil
- 1/2 lb. fresh snow pea pods
- 1/2 c. carrots, sliced
- 1/4 c. water chestnuts, chopped
- 1/2 c. chicken broth
- 1 tsp. low sodium soy sauce
- 1 tsp. cornstarch
- Coat a nonstick skillet with cooking spray.
- Add oil; place over medium heat until hot.
- Add snow peas and carrots.
- Simmer 2 minutes.
- Add chestnuts and broth.
- Bring to a boil.
- Cover, reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
- Combine soy sauce and cornstarch, stirring until cornstarch is dissolved.
- Add to vegetable mix.
- Cook over medium heat, stirring constantly, until sauce thickens.
- Serve immediately.
- About 51 calories per 1/2-cup serving.
