New Potatoes And Peas

  1. Wash and scrape or peel potatoes.
  2. Place in saucepan with potatoes only half covered in water.
  3. Salt and cover.
  4. Cook 25 minutes or until tender.
  5. Drain, saving 1/2 cup stock.
  6. Melt margarine.
  7. Blend in flour.
  8. Cook about 1/2 minute.
  9. Pour potato cooking water into 2-cup measuring cup and finish filling with milk.
  10. Add butter and flour mixture.
  11. Mix well.
  12. Stir and cook until thickens.
  13. Add salt, basil and pepper.
  14. Add to cooked potatoes.
  15. Add peas.
  16. Heat 1 to 2 minutes.
  17. Serves 8.
