Mustard And Rosemary Chicken
- 1/3 cup French mustard
- 1/4 cup grainy mustard
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon crushed garlic
- 1 tablespoon cracked black pepper
- 1 tablespoon coarsely chopped fresh rosemary
- 6 small zucchini, halved lengthways
- 1 small read capsicum, sliced thinly
- 8 chicken thigh fillets, halved
- chopped parsley
- Preheat over to hot. Combine mustard's, juice, oil, garlic, peper, rosemary, zucchini,.
- and capsicum in a large bowl, add chicken.
- Cover and stand 10 minutes.
- Remove chicken, reserve marinade and vegetables.
- Place chicken on oil covered rack in a baking dish and bake uncovered in hot oven 15 minutes.
- Place marinade and vegetables in saucepan cook until tender.
- Serve chicken and vegetables garnished with parsley.
