Nonnie'S Zucchini And Sausage Pasta

  1. Heat olive oil and garlic; do not brown!
  2. Add sausage, remove when cooked.
  3. To pan juices, add onion, celery and carrots.
  4. Saute until softened (not mushy).
  5. Put aside with sausage.
  6. Saute cubed zucchini (first wash with vegetable brush, but do not skin). Zucchini should be crisp.
  7. Add ingredients from bowl.
  8. Add
  9. cream, wine or vermouth (to taste, about 3 tablespoons), tomato paste (about 1 tablespoon) and spices.
  10. Simmer 15 minutes.
  11. Add cooked pasta and cheese to taste.
