Golden Raisin Bread

  1. Combine raisins, shortening and 1 1/4 cups water.
  2. Heat to boiling, stirring until shortening melts.
  3. Cool to lukewarm. Soften yeast in remaining 1/2 cup water.
  4. Add sugar, salt, spices and 1 cup flour.
  5. Mix well.
  6. Add raisin mixture.
  7. Gradually add remainder of flour.
  8. Knead 3 minutes.
  9. Brush dough with oil. Cover; let rise in bowl until double, about 1 3/4 hours.
  10. Punch down.
  11. Shape into 2 medium loaves.
  12. Brush top with oil.
  13. Let rise until double (45 minutes).
  14. Bake at 375u0b0 for 40 minutes.
