Shrimp And Pasta Salad(Low-Fat)
- 4 c. cooked small seashell macaroni, cooked without salt or fat
- 1 1/2 c. chopped cooked fresh shrimp (about 1 lb.)
- 1/2 c. frozen green peas, thawed
- 1/2 c. sliced green onions
- 1/4 c. chopped fresh parsley
- 1/2 c. plain low-fat yogurt
- 1/2 c. reduced calorie mayonnaise
- 2 Tbsp. chopped fresh dill weed
- 2 Tbsp. fresh lemon juice
- 2 tsp. grated lemon rind
- 1/4 tsp. salt
- 1/8 tsp. pepper
- fresh dill weed sprigs (optional)
- Combine first 5 ingredients in a large bowl; toss well. Combine yogurt and next 6 ingredients in a bowl; stir well.
- Add to pasta mixture, tossing to coat.
- Cover and chill.
- Garnish with fresh dill weed, if desired.
