Stuffed Potatoes Cacciatore

  1. Scrub potatoes.
  2. Prick with fork.
  3. Cook uncovered in microwave on 100% power, 13 to 16 minutes.
  4. Let potatoes sit while making sauce.
  5. Combine zucchini, onion, garlic and water in covered container.
  6. Cook on High, 3 to 5 minutes or until tender.
  7. Drain. Stir in chicken and both cans of tomatoes and Italian seasonings. Cook covered 5 to 7 minutes until heated through.
  8. Split potatoes. Mash centers.
  9. Add salt and pepper to taste.
  10. Spoon sauce on top, then sprinkle with cheese.
  11. Return to microwave to melt cheese.
