Grandma'S Baked Manicotti
- 2 eggs, beaten (or substitute)
- 1/4 c. chopped fresh parsley
- 1/2 tsp. salt
- 1/2 c. grated Parmesan cheese
- 3 c. low-fat Ricotta cheese
- 4 Tbsp. diced onion
- 16 manicotti shells (uncooked)
- 32 oz. tomato sauce
- 2 to 3 Tbsp. grated Parmesan cheese (optional)
- Mix eggs and parsley in large bowl.
- Add salt, Parmesan and Ricotta cheeses and onion.
- Mix well.
- Stuff the uncooked manicotti shells with the cheese mixture.
- Preheat oven to 400u0b0. Pour half the tomato sauce onto baking dish.
- Arrange the stuffed manicotti in the pan.
- Pour the rest of tomato sauce over the manicotti.
- Cover and bake for about 20 minutes.
- You may sprinkle Parmesan cheese over manicotti immediately before serving.
- Yield: 6 to 8 servings.
