Shrimp Feta
- 2 c. coarsely chopped onion
- 2 cloves garlic, minced
- 2 Tbsp. oleo or butter
- 2 Tbsp. oil
- 4 c. fresh tomatoes, chopped coarsely
- 1 tsp. dried dill weed
- 1 tsp. dried basil
- 2 lb. large shrimp, peeled and deveined
- 1 tsp. dry mustard
- 2 tsp. sugar
- 1/2 c. fresh parsley, chopped
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1/2 c. white wine
- 1/2 lb. Feta cheese
- In a large skillet with cover, saute onion and garlic in butter and oil until golden.
- Stir in tomatoes, dill, basil, mustard, sugar, parsley, salt and pepper.
- Simmer 5 to 8 minutes.
- Add shrimp and wine.
- Continue simmering, stirring about 3 to 5 minutes or until shrimp cooks through (don't overcook).
- Turn off heat; sprinkle crumbled Feta in skillet.
- Cover and let sit two minutes. Serve over rice with crusty bread and green salad.
