Walnut Cherry Delight
- 1 c. shelled walnuts
- 1 1/4 c. flour
- 1/2 c. packed brown sugar
- 1/2 c. butter, softened
- 1/2 c. flaked coconut
- 8 oz. cream cheese (soft)
- 1/3 c. granulated sugar
- 1 egg
- 1 tsp. vanilla
- 1 can cherry pie filling
- Chop 1/2 cup of walnuts coarsely; set aside for garnishing. Chop remaining walnuts fine.
- Combine flour, brown sugar and butter; blend until fine crumbs form.
- Add coconut and finely chopped walnuts.
- Mix well.
- Set aside 1/2 cup.
- Pack remainder onto bottom of greased 9 x 13-inch pan.
- Bake at 350u0b0 about 15 minutes.
- Beat cream cheese with granulated sugar, egg and vanilla until very smooth.
- Spread over hot baked walnut layer.
- Bake 10 minutes.
- Remove and spread cherry pie filling over the top. Sprinkle with coarsely chopped nuts and reserved flour/brown sugar mixture.
- Bake 15 minutes.
