Chocolate Pie
- 1 sq. semi-sweet baking chocolate
- 2 Tbsp. butter
- 1/3 c. flour
- 1 c. sugar
- 1/4 tsp. salt
- 2 1/2 c. milk, scalded
- 3/4 tsp. vanilla
- 3 eggs, separated
- 1/3 c. sugar
- 1 baked 8-inch pie shell
- Melt the chocolate and butter in a double boiler.
- Mix the flour, sugar and salt; stir into chocolate.
- Add the milk slowly, stirring constantly, until fully thickened, about 15 minutes. Beat the egg yolks well.
- Stir in a little of the chocolate into the eggs; then return to the hot mixture and cook for 2 minutes, stirring constantly.
- Remove from heat and cool partially.
- Stir in vanilla.
- Pour into pie shell.
- Beat egg whites until soft peaks form; then add 1/3 cup sugar until stiff.
- Swirl the meringue over the pie.
- Bake at 350u0b0 for 5 to 10 minutes or until golden brown.
