Stuffed Mushrooms Italiano
- 12 lg. mushrooms
- 1 Tbsp. butter
- 1/4 c. chopped onion
- 1/2 clove garlic, minced
- 1/4 c. diced pepperoni
- 2 Tbsp. finely chopped green pepper
- 1/4 c. round crackers, finely crushed
- 1-1/2 Tbsp. grated parmesan cheese
- 2 Tbsp. snipped parsley
- 1/4 tsp. seasoned salt
- 1/8 tsp. crushed dried oregano
- Dash of pepper
- Wash the mushrooms and remove the stems.
- Chop the stems and put them in a mixing bowl.
- Add the butter, onions, garlic, pepperoni and green pepper.
- Cook, covered, on High in the microwave oven for 2-3 minutes.
- Stir in the cracker crumbs, cheese, parsley, salt, oregano and pepper, and mix well.
- Spoon the mixture into the mushroom caps and cook, covered, on Medium in the microwave for 4 minutes.
