African Chicken
- 2 1/2 to 3 lb. chicken parts
- 1/2 c. salad oil
- 1 medium onion, chopped
- 1 clove garlic, chopped
- 2 Tbsp. flour
- 1 c. white wine
- 3/4 c. water
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 bay leaf
- 2 fresh tomatoes, sliced
- 3 medium sweet potatoes, peeled and cubed
- 5 medium firm bananas, peeled and sliced lengthwise
- Heat 1/4 cup oil in frypan.
- Add chicken, onion and garlic and saute until crisp, turning evenly.
- Sprinkle with flour and add next 6 ingredients; mix well.
- Cover and cook 30 minutes.
- Add potatoes and continue cooking another 30 to 35 minutes at 350u0b0. Just before serving, heat remaining 1/4 cup oil and saute bananas until golden.
- Arrange chicken in center of platter; surround with potatoes and bananas.
