Rumble Seat Chili
- 1 lb. ground chuck
- 1/2 to 1 pkg. chili seasoning (to taste)
- 46 oz. tomato juice
- 2 (14 oz.) cans stewed tomatoes (1 original and 1 Mexican style)
- 22 oz. chili hot beans
- 1 c. elbow macaroni
- chili powder to taste
- Tabasco sauce to taste (optional)
- onions (optional)
- catsup (optional)
- Brown meat in large skillet and drain.
- Sprinkle with generous amount of chili powder.
- Stir and cook an additional several minutes.
- Put tomato juice, stewed tomatoes, beans and chili seasoning in large pot (5-quart) and heat on moderately high heat. Add meat, macaroni and onions (if desired).
- Reduce heat to low and cover.
- Stir frequently.
- Add chili powder to taste and Tabasco sauce (if desired).
- Cook at least 2 to 3 hours.
- The longer it cooks the better it gets.
