Chicken And Biscuit Casserole
- 1/2 c. chopped onions
- 1/2 c. chopped celery
- 1/2 c. chopped green pepper
- 1/4 c. butter or margarine
- 4 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder
- 2 1/2 c. chicken broth
- 3 c. cubed cooked chicken
- 2 c. biscuit mix
- 2/3 c. milk
- Preheat oven to 425u0b0.
- Cook onion, celery and green pepper in butter until soft.
- Blend in flour, salt, pepper and garlic powder. Add chicken broth and cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
- Combine onion mixture with chicken and pour into greased 2-quart casserole.
- Place in oven to heat while you make the biscuits.
- Prepare biscuit mix and knead a few times.
- Roll out and cut into 1-inch thick biscuits.
- Place biscuits on top of hot chicken mixture and bake until biscuits are lightly browned, about 25 minutes.
- Serves 6 to 8.
