Red Beans And Rice
- 3/4 lb. Italian sausage, sliced 1-inch thick
- 1/4 c. butter
- 1 large onion, chopped
- 1/2 c. celery, chopped
- 1 small green pepper, chopped
- 2 Tbsp. parsley, chopped
- 1/3 c. green onion tops, chopped
- 2 (15 oz.) cans New Orleans style kidney beans
- 2 Tbsp. ketchup
- 2 Tbsp. Worcestershire sauce
- 1 (8 oz.) can tomato sauce
- 1/8 tsp. red pepper
- 1 c. raw rice
- salt and pepper to taste
- Saute sausage and butter for 5 minutes.
- Remove sausage and drain.
- Saute vegetables in drippings for 5 minutes or until they begin to wilt.
- Add sausage, beans and remaining ingredients. Cover and bring to a boil.
- Simmer 20 to 30 minutes.
- Cook rice according to package.
- Serve red beans over rice.
- Feeds 8 people.
