Italian Haddock
- 2 lbs. fresh haddock
- 1 tsp. garlic powder
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. chopped parsley
- 1 tsp. oregano
- 1 Tbsp. chopped green pepper
- 1/2 c. seasoned bread crumbs
- 1 28 oz. can Italian tomatoes cut up (save juice for later use)
- 1 8 oz. can tomato sauce
- 1/2 c. salad oil
- Mozzarella cheese - one slice per serving
- Cut fish in serving size pieces and place in baking dish. Sprinkle garlic powder, salt, pepper, parsley, oregano and green pepper on each piece of fish.
- Sprinkle bread crumbs over top of fish.
- Add tomato pieces, then mixture of tomato sauce and sauce from can of tomatoes.
- Pour oil over all and bake at 375 degrees for 45 minutes to 1 hour.
- Baste once or twice during baking.
