Eastern European Kompot(Bulgaria)
- 10 cups water
- 3/4 - 1 cup sugar
- 3/4 cup dried prune, pitted, quartered
- 1 cup blueberries (optional)
- 4 ounces raisins (or currants-about 3/4 cup)
- 3 -4 ounces dried apricots, quartered (about 1/2 cup)
- 4 -8 cups ice
- Bring 10 cups of water to a boil.
- Wash all the fresh fruit.
- When the water starts to boil, carefully add all the fruit and bring water back to a boil.
- Lower heat to medium low and let the mixture simmer for 35-45 minutes, uncovered.
- Remove from heat and stir in 3/4-1 cup of sugar, to taste.
- Let kompot cool completely, strain off the juice and refrigerate. Serve chilled with ice.
- Make your kompot as light or strong as you want, by adding more water if you want it lighter. Just be sure to add a few pieces of fruit on the bottom.
- Note:
- You can eat the fruit after straining. It's good! Or puree, and maybe use in making a cake.
