Lasagna Rolls
- 1 lb. hamburger, browned and drained
- 1 c. chopped mushrooms
- 1/2 c. chopped green pepper
- 1 1/2 c. V-8 juice
- 1/2 tsp. oregano
- 1/8 tsp. pepper
- 2 Tbsp. cornstarch
- 1 (15 oz.) cottage cheese
- 2 c. Mozzarella cheese
- 2 eggs, beaten
- 1/2 lb. lasagna noodles, cooked and drained
- 1/4 c. Parmesan cheese
- Combine hamburger, mushrooms, pepper, V-8, oregano, pepper and cornstarch.
- Cook until vegetables are tender and sauce thickens, stirring constantly 5 minutes or more.
- Layer this mixture, then 1/3 cup of cheeses and eggs mixed on each noodle and roll up. Place in 13 x 9-inch pan and add 1 cup of sauce on bottom and put rolls in, then top with remaining sauce.
- Bake at 375u0b0 for 30 minutes.
- Add Parmesan cheese on top and bake 5 minutes more.
