Coarse Grain Mustard

  1. combine vinegar onions, and tarragon in a deep bowl.
  2. boil water, and add to bowl.
  3. let this marinate for 3 hours.
  4. strain into a saucepan.
  5. grind mustard seeds with a mortar and pestle or in a processor.
  6. add ground mustard and remaining ingredients to saucepan.
  7. bring to a boil and simmer for 5 minutes.
  8. taste and add some water to tame the heat, if necessary.
  9. pour into a sterile jar, seal, and store up to 1 month.
  10. let it sit for 1 day before using.
