Pineapple Sticky Cake(Our Family Birthday Cake.)
- 1 c. brown sugar (2/3 c.)
- 1/2 c. butter (1 1/2 inches)
- 4 pineapple slices
- 1 c. white sugar
- 1 c. flour
- 1 1/2 tsp. baking powder
- 3 Tbsp. water
- 1 1/2 Tbsp. cornstarch
- 2 egg yolks
- 2 eggs whites, beaten stiff
- 1/2 tsp. vanilla
- Melt together brown sugar and butter in 8-inch round iron skillet.
- Do not brown.
- Place 4 pineapple slices in pan (I use as many pineapple as I can fit in). In different bowl, place white sugar, flour and baking powder.
- Mix together in measuring cup the water, cornstarch and egg yolks.
- Add cornstarch mixture to batter.
- Fold in stiffly beaten egg whites and vanilla.
- Pour over sugar and butter mixture.
- Bake at 325u0b0 for 45 minutes.
- Remove from pan at once.
