Cauliflower Au Gratin
- 1 medium head cauliflower
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 c. milk
- 1/8 tsp. mace or nutmeg
- 1/8 tsp. cayenne pepper
- 1 Tbsp. parsley, chopped
- paprika
- 3/4 c. day old bread, diced into 1/2-inch pieces
- 1/4 c. walnuts, chopped
- Separate cauliflower into flowerets and cook in boiling, salted water for 10 minutes.
- Drain and turn into a casserole or shallow baking dish.
- Melt 2 tablespoons butter in a saucepan.
- Blend in flour and salt.
- Gradually add milk and cook, stirring constantly, until thickened.
- Add spices and parsley.
- Pour over cauliflower. Melt remaining butter and add several good shakes of paprika.
- Toss with bread cubes.
- Add walnuts and sprinkle over cauliflower.
- Bake 10 to 15 minutes in a 400u0b0 oven.
