Pork Chow Mein
- 1 Tbsp. plus 1 tsp. vegetable oil
- 2 c. sliced onions
- 2 tsp. soy sauce
- 1 c. sliced celery
- 1 c. julienne-cut red or green bell pepper (thin strips)
- 1 c. bean sprouts
- 12 oz. julienne-cut cooked pork (thin strips)
- 2 cloves garlic, minced
- 1 pkg. instant chicken broth
- 3/4 c. water
- 1 tsp. cornstarch
- 2 Tbsp. chopped green onions
- sliced mushrooms
- 2 c. cooked long grain rice (hot)
- In 10-inch nonstick skillet heat oil, add onions and garlic. Saute but don't brown.
- Add celery and pepper strips.
- Saute until tender-crisp, about 3 minutes.
- Add mushrooms and bean sprouts, saute, stirring occasionally, for 3 minutes.
- Add pork and soy sauce and broth mix.
- Stir.
- Combine water and cornstarch and stir until dissolved.
- Add to skillet and cook, stirring constantly, until thickened.
- Sprinkle with onions and serve over rice.
