Eldorado Casserole
- 1 lb. ground beef
- 1 tsp. minced garlic (optional)
- 1/2 c. sliced olives (optional)
- 1 c. cottage cheese
- 12 oz. Monterey Jack, shredded
- 1 Tbsp. chopped onion
- 2 (8 oz.) tomato sauce (we've used 1 can tomato paste and jar salsa)
- 1 c. sour cream (or 1 c. dill dip)
- 4 oz. can green chilies (optional)
- 8 oz. tortilla chips
- Mix ground beef, onion and garlic in skillet.
- Cook until meat is browned.
- Add tomato sauce and olives.
- Simmer for 10 minutes. Mix cottage cheese, sour cream and chilies.
- Butter a 9 x 13-inch casserole and layer ingredients in the following order:
- Tortilla chips, meat sauce, cottage cheese mix and Monterey Jack; repeat. Bake at 375u0b0 for 25 to 30 minutes.
- Serves 6 to 8.
