Cranberry Beef Balls
- 1 lb. ground round
- 2 slices bread, cubed
- 1/4 c. milk or tomato juice
- 1/4 c. minced onion
- 2 tsp. tomato paste
- 1 Tbsp. Worcestershire sauce or steak sauce
- 2 eggs, beaten
- 1 (1 lb.) can cranberry sauce
- 2 tsp. salt
- 1/8 tsp. pepper
- 1 Tbsp. minced parsley
- 1 bay leaf
- 1 clove garlic, minced
- 1 Tbsp. vinegar
- Pour milk or juice over bread.
- Mix in beef.
- Form into 12 balls.
- Brown on all sides in 2 tablespoons butter or margarine. Drain off fat.
- Whip cranberry sauce and vinegar with a fork.
- Pour over meatballs.
- Cover and simmer 20 minutes.
- Serve over rice or noodles, or in center of rice or noodle ring.
