Red Beans And Sausage With Rice

  1. Wash beans, soak at least 8 hours; drain.
  2. Cover beans with water.
  3. Add ham, boil, cover and simmer 45 minutes.
  4. Add ingredients onion through hot sauce.
  5. Cover and cook 1 hour.
  6. Stir occasionally.
  7. Add sausage.
  8. Cook, uncovered, 45 minutes.
  9. Serve over rice.
