Red Beans And Sausage With Rice
- 1 small ham hock or 1 slice ham (no-fat)
- 1 lb. dried red kidney beans
- 2 c. chopped onion
- 1 1/2 c. celery
- 1 1/2 c. green pepper
- 1/2 c. green onions
- 1 c. ketchup (or 8 oz. tomato sauce)
- 1 tsp. garlic powder
- 1 tsp. oregano (whole)
- 1 tsp. thyme (whole)
- 1/2 tsp. pepper (white or black)
- 1/2 tsp. red pepper
- 2 bay leaves
- 2 to 3 dashes hot sauce
- 1 lb. lite smoked sausage or Polish kielbasa sausage
- Wash beans, soak at least 8 hours; drain.
- Cover beans with water.
- Add ham, boil, cover and simmer 45 minutes.
- Add ingredients onion through hot sauce.
- Cover and cook 1 hour.
- Stir occasionally.
- Add sausage.
- Cook, uncovered, 45 minutes.
- Serve over rice.
