Chicken Alfredo
- 1/4 c. vegetable oil
- 1/4 c. lemon juice
- 1/4 c. freshly grated Parmesan cheese
- 1 tsp. oregano
- 4 tsp. salt
- 1 tsp. pepper
- 2 chicken broiler fryers, halved
- 1 c. flour
- 4 tsp. paprika
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. freshly grated Parmesan cheese
- 1/2 c. butter
- Combine oil, lemon juice, Parmesan cheese, oregano, 2 teaspoons salt and 1 teaspoon pepper.
- Beat well.
- Pour over chicken halves. Cover and refrigerate for 2 hours or longer.
- Combine remaining ingredients, except butter.
- Remove chicken from marinade and roll in the flour mixture.
- Saute chicken in butter until browned on both sides.
- Place each chicken half, skin side up, in center of a double thick square of heavy-duty aluminum foil.
- Bring up sides and ends and seal with tight folds.
- Place packets on baking sheet and bake at 425u0b0 for 1 hour.
- Makes 4 servings.
