Christmas Cake(British Style)
- 1/2 lb. butter or margarine
- 1 Tbsp. mixed spice
- 1/4 tsp. nutmeg
- 1/2 lb. flour
- 1 lb. seeded raisins
- 1/2 lb. dried apricots
- 1/2 lb. almonds
- grated rind of 1 orange or lemon
- 1/2 lb. brown sugar
- 1 tsp. cinnamon
- 6 eggs, separated
- pinch of salt
- 1/2 lb. currants (optional)
- 1/4 lb. mixed peel (lemon and orange)
- 1/4 pkg. glazed cherries
- Preheat oven to 250u0b0 to 275u0b0.
- Cream the butter, sugar and spices.
- Beat in egg yolks.
- Fold in half of stiffly beaten egg whites, then half of sifted flour and salt, then remainder of egg whites and remainder of the flour.
- Add prepared chopped fruit. Bake for 3 1/2 to 4 hours in papered 8-inch square pan.
