La Bella Lasagne
- 1/2 lb. ground beef
- 1/2 lb. ground pork
- 1 clove garlic, minced
- 2 Tbsp. chopped parsley
- 1 Tbsp. basil
- 1 1/2 tsp. salt
- 1 (No. 303) can tomatoes (1 3/4 c.)
- 26 oz. can tomato paste
- 2 c. Ricotta cheese or cream-style cottage cheese
- 1/3 c. Parmesan cheese
- 2 eggs, beaten
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 lb. Mozzarella cheese
- 1 lb. pkg. lasagne, cooked, drained and rinsed in cold water
- Cook meat until brown. Drain off excess fat.
- Add garlic, parsley, basil, salt, tomatoes and tomato paste. Simmer for 1/2 hour, stirring occasionally. Combine Ricotta and Parmesan cheese. Add eggs, salt and pepper.
- To assemble lasagne, pour a thin layer of tomato sauce in bottom of a 13 x 9-inch baking dish. Cover with a layer of lasagne.
- Lay half the Mozzarella over cheese.
- Spread a layer of tomato sauce over all. Repeat layers. Top with remaining lasagne and tomato sauce.
