Healthy Yam Casserole

  1. Steam yams in 1/2 cup water in pot with tight fitting lid until tender (15 to 20 minutes).
  2. Peel and slice potatoes and layer them in a casserole.
  3. Pour small amount of melted butter or margarine over yams.
  4. Peel and core apples, slice 1/2-inch thick, layer on top of yams.
  5. Sprinkle raisins over top of apples.
  6. Heat apple juice to boiling.
  7. Combine cornstarch and 3 tablespoons of water, add to juice, cook until sauce is clear and thick.
  8. Add honey to sauce.
  9. Pour over apples and then top casserole with wheat germ.
  10. Bake in a 350u0b0 oven until apples are tender, about 30 to 45 minutes.
  11. Serve with fat-free Cool Whip.
