Shrimp And Spinach Quiche
- 1 frozen (9-inch) deep dish pie crust
- 1/4 lb. sharp Cheddar, grated
- 8 jumbo eggs
- 6 oz. cleaned shrimp, cooked
- 1/4 c. chopped scallions
- 2 Tbsp. melted butter
- 1/2 lb. Swiss cheese, grated
- 1/4 lb. Colby cheese, grated
- 1/2 c. milk
- 5 oz. cleaned and drained spinach
- 1/2 tsp. salt, pepper and nutmeg
- Prick bottom and sides of pie crust and bake for 5 minutes at 375u0b0.
- Line bottom of crust with thin layer of Swiss cheese, then sprinkle on Colby and Cheddar cheeses and top with remaining Swiss cheese.
- Beat eggs with milk.
- Add salt, pepper, nutmeg and spinach.
- Pour mixture on top of cheeses.
- Sprinkle scallions on top; dot with melted butter.
- Place pie on nonstick cookie sheet and bake at 375u0b0 for an hour or until mixture is set.
- Serves 4 to 6.
