Meatballs
- 1/2 c. chopped onions
- 1 tsp. minced fresh garlic
- 2 tsp. vegetable oil
- 2 thin slices bread
- 1/4 c. water
- 1 lb. ground beef or ground round
- 1 Tbsp. dried parsley flakes
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 egg
- 1 tsp. oregano
- 1/2 c. Parmesan cheese
- In a 10-inch skillet (nonstick), brown onion and garlic in oil over moderately high heat for 2 minutes.
- Remove from heat. Combine bread and mix with water in a large bowl.
- Add beef, onion and garlic (don't wash skillet), parsley, salt, pepper, oregano and Parmesan cheese.
- Stir in eggs and mix with a wooden spoon until well blended.
- Shape into meatballs.
- Brown on all sides in skillet onion was cooked in, about 15 minutes.
- Then place in spaghetti sauce and simmer.
