Ham And Pecan Stir-Fry

  1. Drain pineapple, reserving juice.
  2. Cut ham into bite size strips.
  3. Cut green pepper into 1-inch pieces.
  4. Stir pineapple juice, soy sauce, sherry, cornstarch and red pepper.
  5. Over high heat, add 1 tablespoon oil, add pecans and stir-fry until toasted, about 30 seconds; remove.
  6. Add green pepper, 1 minute.
  7. Remove and add remaining oil; add ham and stir-fry 2 minutes. Push ham to side; add cornstarch mixture.
  8. Cook until thick.
  9. Add pepper, pineapple and pecans; cook 2 minutes.
  10. Serve over rice.
